Why "Coche Valley" - "Coche Valley" was chosen as the cafe's name due to the owner's affection for cats. The decision to name the cafe after her beloved cat, "Coche," was combined with "Valley" to reflect our location in Capitol Hill, also known as "The Hill." This name signifies both the owner's love for her feline companion and our cafe's connection to the vibrant community in Capitol Hill.
